THE CUP OF TEA CAKE ( sometimes referred to as Brac)

THE CUP OF TEA CAKE ( sometimes referred to as Brac) To 1 cup of cold tea add 1 cup of dried fruit(chopped apricots,dates, mixed fruit, sultanas or my favourite,raisons) Allow to soak for 30 minutes, then add; 1 cup SR flour ( wholemeal is nice) 3/4 cup brown sugar 1 egg 1/2 tsp mixed spice Opt walnuts ( to sprinkle on top) I use a loaf tin, spray oiled and lined with a strip of Gladbake and cook in a 180 deg oven (160 fan forced) for 30 - 35 minutes, leave in tin 10 minutes. Cool on a wire rack or serve warm with/ with out butter/spread. * Better eaten the day it is cooked but does freeze.
