It has to be said….this summer has been the season of the zucchini ! Because of all the hot weather they have been growing like crazy ! From the ideal size to pick ( courgette as the french say) to a ginormous size more like a marrow overnight! Wow… hard to keep up with using them before two more overgrown ones appear on the bush next day.. so here are the promised recipes to use if you find yourself similarly over abundantly supplied or the recipient of some…everone is giving them away.

Best Ever Zucchini Slice ( Stephanie Alexander)
Spiced Zuchinni Soup (Bill Granger) Superb, with a delightful piquancy! Dont blend too much so as to leave some recognisable veggy bits in it.
Freezes well ( before yoghurt is added)
Zucchini Bread...not too sweet and makes two loaves.
2 Cups grated zucchini ( peeled)
2 tsp vanilla
1 1/2 cups sugar
3 tsp cinnamon
1 tsp salt
Beat all till frothy then add 1/4 tsp baking powder, 1 tsp bicarb soda, 3 cups plain flour, 1/2 – 1 cup chopped nuts.
Pour into two loaf tins and bake in moderate oven till cooked.
